It is always an honour to be included on a restaurant’s menu, but there are selection processes that go beyond the commercial aspects and that, if they go well, are a real joy.
This is what has happened to us at Tourism Paradores, where our Pasión Cuvée Brut Nature cava has managed to pass a demanding selection process, based on blind tasting. The ‘prize’ is to remain on the menu of Paradores restaurants during the second quarter of the year as a ‘sommelier’s selection and market discovery’.
This is the fifth year that we have managed to include our wines in the select Tourism Paradores wine list, in their quarterly selection processes. Other wines from the winery previously selected have been Pasión de Bobal red, Pasión de Bobal rosé, both from DOP Utiel-Requena, and Equilibrio Sauvignon Blanc, DOP Jumilla.
In addition, for the last two years the permanent wine list has included Bercial Ladera Los Cantos (PDO Utiel-Requena), a plot wine, which was the only wine selected in its category and with the best overall score, within the tender ‘wine regions of Spain’.
Pasión Cuvée Brut Nature is the first cava with which we entered into sparkling wine production two years ago. To make it we use the Chardonnay, Macabeo and Xarel-lo varieties, selected from the best plots and harvested at night to prevent oxidation of the grapes. This cava is aged for a minimum of 9 months in the bottle.
Pasión Cuvée Brut Nature, in addition to being organic, is certified as a vegan cava, like all the wines and cavas we make at Bodega Sierra Norte.
