Bobal 40% - Tempranillo 30% - Monastrell 30%
The grapes for this wine are sourced from vineyards grown in a balanced, caring and sustainable way. The vineyards’ soils carry great importance, being very active with good biological conditions which favour a fast assimilation of reincorporated organic matter. This enables full terroir expression.
A pre-fermentation cold soak with frequent pump-overs followed by a temperature-controlled alcoholic fermentation. The wine is then run into French oak barrels for the malo-lactic fermentation and for 6 months ageing. Just before the bottling, the fining, stabilisation and filtering processes are carried out in the gentlest way possible in order to preserve all of the wine’s character.
A medium-deep, bright, clean, vermillion-red colour. Nice clean fruit on the nose with well integrated toasty oak. Balsamic, fresh and elegant. Good structure on the palate, pleasant and silky with well integrated acidity and a lingering finish.
Excellent with semi-cured cheese, oily fish, white meats or even roasted meats, such as goat meat or lamb. Also great with oyster mushrooms, cod cooked in sauce, as well as fish in sauce generally.
Best served at a temperature of 16-18ºC.
